Mitko Manolev has a small cellar uphill from the main street in upper Melnik, where he serves his own wines and his opinions about wines and winemaking. I tasted three wines (one semi-sweet white) and two reds from the local Melnik grape, and my tasting fee was waived when I bought a bottle of red. A nice place to while away a few minutes or an hour chatting with Mitko, who warms up as you get to know him (in fact, after visiting his cellar, I met him, his family, and several friends later in the evening to share drinks at a local restaurant).
