I do not have my home ready yet, and I wanted to give a small party of about 20 folks to thank them for their help in moving to Mexico. I reached to Linda with some ideas of a menu, and she was so easy to work with, and we came up with a splendid plan within my budget. The party was held in a beautiful garden of a local restaurant (Loves and Fishes on Constitucion 14), with everything we agreed on, plus some nice surprises. Best Sangria ever, lovely fruit salad, bean salad, pork tenderloin bruschetta, and guac and chips. Plus citrus and raspberry tea. We could NOT be more pleased!

Shopping, learning and cooking with Abuelinda really added to my adventure to Ajijic!

While in Ajijic, be sure to take in a cooking lessons from Abuelinda. She is very easy to find in the downtown area.

It seems that her classes are very popular, especially the Wed class where she escorts you to the Farmers' market before you start cooking.

We attended the Mexican Botanas class (Tapas made simple). There were 8 people in the class and Abuelinda kept giving each of us chores while explaining the individual ingredients that were being prepared. I enjoyed learning about the various peppers. There is one pepper that is so small that it's seeds grow right into the skin; and because it is the seeds that make a pepper hot, you just cannot get away from this particular pepper's heat.

We made an enormous amount of food, including a wonderful fruit and veggie salad dressed with lime juice and cilantro, a pasta dish, a green sausage filling for sopes and a very low fat cheese broiled with hot sauce. There was more than enough food for everyone to enjoy.

Fatima, Abuelinda's assistant, had made a lovely chocolate cake for dessert.

Don't forget to bring your own beverage to drink while you are cooking and sampling the food.

I was very impressed that Abuelinda stressed the importance of keeping our hands clean during the cooking process.

It was also fun when she gave us 10 pesos to go next door and buy tortillas.

What I will remember most about our time with Abuelinda is her passion for the art of Mexican cuisine. She also gave us some very practical information about life on Mexico - ie what is the minimum wage and what a family living with this income can hope to purchase to keep themselves fed.

Abuelinda's kitchen is a welcoming and cheerful place where 6 of us shared the experience of preparing a great Mexican meal. Abuelinda herself is charming and so willing to share her knowledge. We chopped and listened while Abuelinda slipped in details about Mexican cuisine and tips on how to use citrus and vegetables commonly used in Mexico. With 6 of us in the class, a lovely meal was ready in no time. Time to enjoy which we did enormously. A fabulous experience! Thank you Abuelinda, Denise G.

We had a lovely time. Firstly a leisurely stroll through the local market learning about different fruits, vegetables, beans & baked goods. Also shared info about local crafts and clothing. Then we walked back to her kitchen in the center of the village to cut, cook and chat. Learned a lot about Mexcio and mexican cooking and enjoyed a great meal with good company. We will repeat this on another day.
