I'm a big fan of Pappy's and Bogart's in St. Louis, which are also very well known, but I have to say Joe's was the best I have ever had.
We arrived at 10:40 AM (they open at 11) on a Thursday and were 2nd in line. They get people through amazingly fast. Even if it took an hour, I would wait for this food.
One thing to consider if you've never been before: my daughter and wife thought the ribs were a little heavy handed on the seasoning, a bit too salty. For me, it was perfect. So, if you're not a fan of salt/seasonings, perhaps skip the ribs and try something else such as the brisket or turkey.
