While driving up Mt Evans, we stopped in at the Echo Lake Lodge for lunch. Our server was very friendly and anxious to help us. He recommended the Bison Stew and/or Bison Chili. We decided to order one of each. The chili wasn't too bad, it had a strong chili powder taste; which brought on some indigestion later in the day... The stew was made from Bison Roast. Our server told us that the roast was cooked for several hours, then put in the stew. I'm from the south, and this was NOT Southern stew. The veggies were barely blanched, nothing cooked down like we do it here. The Bison roast was tough, chewy and had little to no taste. Not what this Ole Southern boy wanted. However, both were served with thick cornbread that was delicious. It had butter and honey on the side which added a nice flavor.
The lodge itself was pretty cool. We watched humming birds play outside the window and could get a glimpse of the lake outside. On the porch and parking lot, the view was breath taking!! I have attached a pic!
I highly recommend this stop mainly for the view, but choose the food for yourself...
