There is a choice of two options of 5 or 6 tasting plates.
Invariably there will be one or two plates that you would rather not have but you have to go with the flow.
All the ingredients are locally sourced and most of all they are cheap. There are ingredients you would rather not know about particularly if you saw them in the market covered in flies!
The biggest disappointment for me was the three tiny langoustines covered with betel leaves, rather tasteless and worryingly they left a rather unpleasant fishy taste to the papaya salad.
You will either love it or hate it according to your expectations.
I am not a fan of eating out of dark plates - an eco thing I suspect.
One might have difficulty in justifying paying such a high price for eating here.

We ate in the upstairs dining room with ceiling fans and I loved the simple decor in this room. The chef came to check with one of our party as there were special dietary requirements which were met with absolutely no fuss at all. Our meal was delicious from beginning to end, although I have to say that for the standout was the delicious chocolate dessert with crunchy vermicelli and praline!
The service, whilst efficient, was perhaps not as friendly as it could have been.

We rode a tuk-tuk to the end of a dusty road that appeared to have its last layer of blacktop 30 tears ago is an oasis named Cuisine Wat Damnak. The restaurant has three venues, we dined in the glass walled and air-conditioned dining room.

Chef/owner Joannes Riviere uses locally sourced, endemic ingredients to create a menu that varies from traditional Cambodian cuisine yet delivers flavors true to Cambodia. Steamed Tonle Sap croaker in a fragrant broth was one of many incredible tastes from the sampling menu we selected. The wine list is short but well matched to the menu.

Chef Riviere visits every table to see to his customer's satisfaction. We had a small world experience during our conversation. On his resume (CV) is experience in our home town of Philadelphia working at George Perrier restaurants that we have had the good fortune to experience.

Ride to the end of this dusty road and enjoy.

We dined here on our last night in Siem Reap. I had to book a table three months in advance, considering it's surge in popularity since it placed in Asia's Top 50 in 2016.

The food was flavourful, a well-balanced blend of French-Khmer fusion, which up until that point was very different from what we've had in Cambodia thus far. They also take dietary requirements into consideration, and can customise according to your needs. The ambience was very cosy but the service has room for improvement, we thought it was rather slow/robotic at times.

At the end of the meal, the chef, Joannès Rivière, will have a chat with the customers and introduce some dishes personally.

Would absolutely recommend for the unique gastronomical experience.
