We booked this ahead of time having had an excellent meal there on our visit last year and were really looking forward it. Our experience though was very disappointing. The Pisco Sours , advertised as ‘the best in town’ were the worst we had in Chile - just sweet and tasteless. The ceviche was bulked out with corn, very acidic and slimy, with little fish. The main course, was a long pile of lukewarm mashed potato with some rather odd, overcooked bits of meat on top, truly disgusting. Our waiter was completely disinterested and disappeared The whole experience was only relieved by a decent bottle of Chilean Chardonnay. This is a very busy place so clearly some people must have a better experience than us, but this was the worst dining experience in our month long South American trip.

The very same day when you came, we gave your feedback to our chef and bartenders, in order to improve our customer's experience. It is very sad to us that we didnt fullfil your expectations. We work very hard day by day to become the best restaurant in the area, and your feedback was very useful.

We ate at Chipe Libre 3 out of the 4 days were were in Santiago. They have a great selection of pisco drinks and a variety of 'small' plates of food (they're actually huge portions). We particularly enjoyed the cebiche and pil pil. The staff were really friendly and the place has a great atmosphere.

We stopped here on Saturday night, and really enjoyed our visit.
The staff spoke fluent English, and were incredibly helpful. We tried two types of pisco sours- having been recommended them by the serving team - both were excellent.
We also had food - including the salmon tartare and cerviche for starters- both were superb ( particularly the cerviche- for which or waiter recommended the addition of a little chilli- which made the dish even more excellent). Both were very good portion sizes for the price.
We ordered the aubergine (eggplant) lasagna and beef steak for main , again both were great.
Would definitely recommend, and we may visit again before we leave Santiago for another pisco sour!!

Chipe Libre has a wide variety of pisco flights and cocktails. My husband and I tried four different cocktails, and they were all unique and tasty. If you like to try new cocktails, this is the place for you.

For dinner, we ordered the ceviche, empanadas, and shirt steak. Having traveled around South America, the ceviche and empanadas were good but not anything extraordinary. My husband noted that the skirt steak was somewhat tough. Given the glowing reviews on TripAdvisor, we were a little disappointed with the food.

Great place for a drink - the terrace out the back is very nice. It was busy on a Friday night which gave it a great atmosphere. We ate here and the food was distinctly average particularly for the price but it’s a great place for a drink and to try Pisco!
