Description: Le Moût : Unfermented grape juice ---the primary and original essence, an ongoing and permanent transformation With her passion to the grand culinary world, Chef Lanshu Chen came back to her home town Taichung after some years in Paris, and opened the French restaurant Le Moût in 2008. It is where she creates her own "Haute Cuisine," featuring the ultimate balance with her Taiwanese roots and the art of French cuisine. Lanshu not only plays with the local seasonal specialties and the best selection from the world, she interprets both cultures through a discreet and unique approach. The balance with layers of finesse versus the pitches of flavors unveils her philosophy, as well as the most poetic part of her creation. Named after the French for fermentation of grape juice into fine wine, Le Moût aims to be the culinary interpretation of this process by transforming simple ingredients into dishes of greatness. Since opening in December 2008 the restaurant has been dedicated to precision, with chef Lanshu Chen and her team scrutinizing the smallest of element, such as measurement of diced vegetables and sourcing of ingredient. Fortunately, I was able to book a table at short notice at Le Mout, considered to be Taiwan's No.1 Restaurant. It took me almost four hours to get to Taichung from Taipei and it was worth it! The degustation menu I had for lunch was well-curated, delicious and visually stunning! Service was attentive and cordial amidst the tastefully done French interiors. I consider my lunch experience at Le Mout to be a highlight of my short visit to Taiwan!

Made a stop in Taichung on my way to Taipei for the purpose to visit Le Mout. Le Mout is helm by female chef, Lanshu Chen. The lack of female chef in the Asia's 50 Best Restaurant is a draw enough for me. Le Mout has 2 choices of lunch set; Menu Creation at 3,500 NT and Menu Sensation at 4,500 NT. The dishes are creative fusion using a mix of ingredients used in Taiwanese dishes together with French traditional cooking methods. Very beautifully presented. Lovely ambiance and great service.

The reason why we would come to Taichung this time, just because we would like to visit Chef Lanshu's restaurant - Le Mout.

The restaurant is gorgeous and the dining experience is great. In fact, it is much better than what I have been visited lots of fine dining restaurants in other cities in the past months. No wonder Chef Lanshu was the Best Female Chef in Asia before!

When we arrived at the entrance, the reception did show warm welcome to us. As a tourist like us, we took many photos before going up to the dining venue, she then handled our requests without any hesitation. While having the dinner, we found that all service staff were helpful and profession. The sommelier also recommended the dessert wine to us which should be the best and we have ever tried as well!

I had a lovely lunch here with a friend. The service was friendly, and the food was generally well executed and quite delicious. The chef uses French techniques and incorporates Chinese elements into the dish, some of which are interesting but otherwise well balanced. Nothing groundbreaking per se, but one will eat well here. Notably, the chef came the greet the guests and she was lovely.

Went to Le Mout for lunch menu, every dish is delicate and full of surprises. Chief's takes on seafood dishes are amazing, I can still remember the lobster dish till today.
Will definitely return.
