(Thin crust F-) If you think a giant glob of cheese on a saltine of undercooked dough that crisps on the outside and separates and doesn’t cook on the inside with a wee slap of unflavored tomato sauce is pizza give it a whirl. Proper...pizza is good Italian pizza dough with a well flavored acidic tomato sauce and herbs. Then you think about putting on a proper pizza mozzarella cheese or something like scamutz but that doesn’t smother a pie like cake icing. Heck some of the best pizza I know the sauce goes on top of a thin layer of cheese and proper dough. Cutting a pie in 24 pieces should be a dead give away your getting gas station quality carbohydrates and nothing more. Zero circles if you could.More
