I’ve discovered that the Philippines has a much better grasp of Cuisines from various regions of Spain than North America, where it somehow gets confused all too often with South American cuisine. The latter may have Spanish (from Spain) influences, but each country and region there has their own unique riff on what their past occupiers brought.
Cantabria, another creation by Chele Gonzalez, sits at the top of The Westin Manila. I was escorted by a gracious hotel staff to the elevator. He pressed “R” for the rooftop floor and politely bowed out.
The place looked plush but not gaudy nor jarring to the senses. In fact, it felt like the interior was meant to sow trust - “We will take care of you.” I was seated at the reserved table and while i waited for my companions, they provided me with a low bench for my bag and wrap.
We all decided to share most of what we ordered since it was our first time there. The tapas of wagyu tartar, two different croquetas (a chicken and a spinach) were crisp and warm outside and creamy and savory inside. There were some oysters and a shrimp appetizer. These were all downed with a sparkling cava that was refreshing and light.
We ordered a paella negra and a seafood one. Thank goodness, for once, I’m eating true arroz dishes where they did not scrimp on the rice. (I’ve been to other Spanish restaurants in Manila and you would not believe how thin the layer of rice is on the paella pans! It’s never like that in Spain.). The seafood was fresh and clean tasting. The squid ink delivered the umami. There was a bowl of a simple salad of mixed greens with slivers of red onions in an oil and vinegar dressing, perhaps to offset the umami punch of the paellas? I would have liked it better if the chef did not add iceberg to the mix. I’ve always thought that iceberg is applicable to only a minuscule number of dishes (wrapping for mu shu pork and such) because of its utterly boring lack of taste and texture.). The chuleton was expertly grilled and presented. The taste and degree of doneness was perfect! The grouper fish was also properly prepared with the fish flesh tender and the right flake. For these mains, we ordered a bottle of red that had a significant garnacha and Cabernet Sauvignon presence. It was a fitting choice.
For dessert, we opted for something with cheese and ice cream (harkens back to when we were children and the street vendors sold sorbetes con queso), a flaky pastry that was so light and one chocolate dessert to cap off the evening.
I think I’ll be back.

Balanced & delicious - full flavor, well seasoned NOT "umay", lovely staff, spacious yet cozy interiors not loud comfortable seating. Ordered the tiger prawns, oysters Ireland, beef ravioli, gambas, iberico pork, squid ink risotto, duck breast who Jhovie helped us navigate through menu. Paired with wines & sangria made from a delightful roll-beside bar cart by Jc. What made the review 1 less star was the duck breast turned out chewy un-swallowable. Overall we will return for the tiger prawns, risotto, grouper, atbp. Est price of 2 seniors 2 adults : php2,900 / person

Our family (my wife, our 2 kids, and my mother), decided to celebrate Mother's Day last May 12, 2024 at Cantabria by Chele Gonzalez. The menu was spectacular! Everything we ordered was thoughtfully prepared (you could tell) and delicious. The staff was also very knowledgeable about the menu items and the ingredients used, since my mother has a lot of food restrictions and had questions about some of the dishes. The food took a while to come out, but it's forgivable as it was a holiday and the restaurant was packed.

Stepping into Cantabria by Chele Gonzalez is like being instantly transported to Spain. The interior design is exquisite, and reminiscent of the sea. Tasting all the food is a whole journey on its own, too. We tried the tapas such as the chili crab croquettes, the Iberico sando, the chicken and truffle croquettes (we ordered this twice because it was just that good), and the beef ravioli. We also ordered the tomato salad, the Solomillo y berenjena (grilled Angus beef tenderloin), and the toffee, cacao dessert. Each dish tasted great, and nothing fell short of expectation. The servers were very attentive too, and changed our plates in between the tapas, the mains, and the desserts. We'll try dining during dinner next time, just to see the difference in ambiance.

If you are looking for a classy atmosphere, a feast of great flavors, and excellent service, Cantabria is a must visit! Our family celebrated my birthday dinner here last weekend and the night was certainly extraordinary and exceeded expectations. Everything we ordered from cold cuts to dessert was delicious but the secreto iberico was my personal favorite.

The dining experience was exquisite. From the ambience to the food and also the service everything was done perfectly and me and my family had a great time. All the food exceeded our expectations and while eating it we were each given a different experience. My brother and mom really enjoyed the duck paella. I enjoyed the chili crab croquettes deeply. So much so that I invited my friend to celebrate his birthday at Cantabria last Sept 14. 10/10 would really recommend. Their SOLOMILLO Y BERENJENA is also a must try and their Jamon Iberico.

MC is the best bartender ever. His smoky Negroni is to die for, and the charred rosemary sangria is the most refreshing cocktail I ever had.
Gezza is the best hostess ever. Her recommendations were absolutely on point. The wagyu and ikura toast was the perfect late night snack, and the Solomillo y Berenjena was a hearty, delicious meal.
I will absolutely return when I’m in Manila again. Highly recommend to anyone looking for a relaxing place with exquisite food and unique cocktails.

I had an excellent dinner with my family at Cantabria. From our experience, this restaurant is a good choice for special occasions like birthdays or date nights with loved ones. The ambiance is intimate but the Spanish elements in the decor make the place elegant. I wish we could have tried more dishes because everything we ordered tasted excellent! A great meal overall that's worth your money.

Since my dad and I generally love squid ink paella, we had to try the Arroz Negro Y Chipiron during our visit. It was an instant favorite for everyone! Definitely the highlight of our lunch gathering. We just ordered two for the table and it was more than enough because it was so thick, rich, and creamy. Arguably the best Arroz Negro we've ever tried, and we can't wait to come back soon.

My family and I got to try Cantabria at others' recommendation and it did not disappoint! I was really impressed with our starters and tapas that we enjoyed with sangrias. I especially liked how savory the chili crab croquettes were. The iberico steak was very tender and tasty. And lastly, the sobao was a perfect ender to our meal, a balance of sweet and tangy goodness. Would love to come back again.

Definitely try the lapu lapu (grouper). Skin crispy, flesh flaky, sauces tasty. I also enjoyed the dessert, a cake with cheese ice cream with jam.

Restaurant was casual bordering on fine dining. Elegant decors . Well spaced tables. Subdued sounds and music. Extensive menu choices highlighting Cantabria in Spain. But at the end of the day it was the magnificence of chef Chele Gonzales , who is a snob by the way , and his highly qualified staff , who were masters of culinary journey. From the starters such as Iberico ham and manchego cheese. From the seafood paella, meat ravioli , lengua estofado , and that wagyu concoctions. Of course there is the sangria and the heavenly desserts . One of the best serving Spanish cuisines . Special thank you to our server Jovita

Food was great! There were plenty of options and all looked good. The grilled octopus was tender. The croquettes were flavorful. The seafood paella was classic but one of the best I've ever tasted. Definitely a great experience whether you are a fan of Spanish cuisine or not. Also, staff was attentive to my needs and very friendly.
