About
Cantonese cuisine is light and delicate, and strives to bring out the original flavors of food. The foremost element of good food is the use of the finest and freshest ingredients. To us, local produce is an excellent choice. Chickens and pigs are raised locally in the New Territories. They taste great because they are fed with good quality forage and slaughtered daily. A number of old-style condiment stores continue to adopt traditional ways to produce superb first extract soy sauce in its purest and freshest form, and hand craft beancurd sheets with strong bean taste. A small number of local fishermen are persistently sailing out during the early hours to the South China Sea to catch live

The resturant is tugged away at a not-so-obvious location at Central district of Hong Kong. But don't let that misguide you. We were required to book two weeks in advance. Figure that. Anyway, the dishes are quite exquisite and prices reasonable but I must say...More

There is Chinese food and there is Chinese cuisine. Chairman makes no compromises on quality and respect of Shunde cuisine which emphasise on enhancing the original taste of the ingredients, never masking with overtly sweet sauces nor overcomplicating and competing flavours. It takes skill to...More

I came back for lunch with six of my friends from oversea. We have pre-ordered some off-menu dishes. My favourite one is the giant grouper fish head with fermented chilli. The gold coin chicken was also our new favourite, it is made from chicken liver,...More

If I can only have one meal in Hong Kong, the Chairman is where I would go. It is Cantonese cooking at the highest caliber. Each dish focuses entirely on highlighting the natural flavors of the ingredients. Everything on the plate is there to please...More

I don't get what the fuss is about. Taro cake with smoked duck was good. The crab (waste of money, very plain), soy sauce chicken (absolutely gross), and mushrooms were all barely edible to not at all. I'm currently at another restaurant because I couldn't...More

Definitely smart casual. I like to look smart when I go to a lovely restaurant. I also think it shows some respect to the host.
