I read about Fawda and chef Fadi Kattan and was excited to eat at the restaurant while I was visiting Palestine. I convinced friends to drive from Ramallah for the night specifically to eat at Fawda. We were sat in the little room in the...back, which was cozy and the table was set beautifully. The meal is a set menu and you have the option of a vegetarian meal. All of the plates were presented beautifully. The first 3 meals were lovely, nothing that blew my mind but I enjoyed them. The final plate was a rack of lamb that was so raw my knife could not cut it. I sent it back twice. The second time I physically took the plate back to the waiter, in doing so there was another woman who said hers was also so raw that she couldn't eat it. The plate came back a third time and was still completely raw, I tried a bit then left it mostly untouched. The chef's response was a that is how it is suppose to be prepared, which is a bit condescending. In all, I really wanted to love this restaurant but left somewhat disappointed. I really hope it improves as it is a great concept and beautiful space.More

The atmosphere at Fawda is great - set in a 1700s Bethlehem building that is peaceful but situated right in the heart of Bethlehem. The setting however is surpassed by the quality and originality of the food - its very Palestinian but with great innovation...about flavours and food combinations. A great deals though goes into the menu for the evening and each dish was a delight. For a special occasion or for food lovers you couldn't do better. Very nice and helpful staff and the energetic chef apart from being a great cook has interesting projects on the go and interesting views on the world. Its a great night outMore

The food and ambiance was amazing, and it was so great to meet Chef Fadi. The staff was also great. Overall would definitely recommend trying to visit Fawda when you are in the region!

I read the reviews carefully and we arrived with such a high expectations. First we called and asked for 6 people table, they were polite and flexible. We asked for special food allergies which partially were ignored but it was fixed immediately in place, not...so professional as they sell themselves but forgivable. We arrived between lunch and dinner, we were the only people there, the place looked charming and clean, just as promising as we expected. We needed some help to choose a bottle of local whine were she couldn't really help us. But we ended up with a great reserved nadin bottle and the price was good. The waiter gave us a daily menu, that explains what is going to be served, and started explaining everything, at first it was ok. Then they again explained every dish right before serving it, it felt arrogant as we were illiterates, but to be honest, the dishes looked so good. As for the food, the first dish was an eggplant so "al dente" that it was not editable. Yet the seasoning was great, too bad it wasn't moist and tender, such a disappointment. The second dish was a pumpkin cream, with zaatar leaves and lemon juice, sounds exotic, too bad it was sour, yet it was still edible. At this point we felt the need to complain and we told the waitress about these points, as a constructive criticism, unfortunately they didn't even cared for our opinion and desire. The main course, lamb ribs, finally they look right, 4 out of the 6 we happy about their tender meat, but once the last 2 received their dishes, the meat was so dry not even chew able, this got me upset, they ruined my whole lunch. I returned them and we asked for different ones we were hungry and we want to eat, not to be tortured, they did something with the same meat and the results were worse! At this point I asked to talk to the chef, yet he didn't have the dignity to appear and only after long suffering and waiting while no one cleans the table, he sent a young boy to argue us that it's perfect and that's how it should be. That we just don't understand it. But they are generous enough not to make us pay for our meals- and for the meal they didn't mean the whole meal only the main course. I was so hungry that I ate my sister's main course leftovers, which was so tender and juicy. The 4 dish was "knaffeh" as they described it. none of us could eat it, it was soooo sour that I spit the first bite. We just wanted to leave and we asked for the bill. In the end they reduced 2*50 nis for the 2 bad main courses as if the main course cost only 50nis out of 150 nis. It was so disrespectful that we argued the desert price to be deducted and for that they just refunded us with the wine price. For that experience and torture they should have paid us.More

We came for the food and we were not disappointed. Dinner was magnificent but the mark of a professional establishment is in the love of preparing and sharing good food. This restaurant hits the mark. A curious conversation among the guests brought the chef out...to discuss our meal and Palestinian cuisine. We tasted, talked, learned, and enjoyed one another’s company. I’ve never had a more intimate eating experience outside my own family. Thank you for the wonderful evening.More

My family and I ate at this restaurant a couple of weeks ago and I am still savouring the food. Each of the four dishes on our menu were prepared with such care and precision that I would have to rate the meal as one...of the most delicious and inventive ones we have ever had. What was particularly special for me was the trouble that the chef went to in order to meet my dietary requirements. I am a type 1 diabetic and I do not eat any sugar including fruit. For dessert, he made me a sublime chocolate mousse. It was so sweet that I was convinced that it had to contain sugar. But it didn’t as confirmed by my blood sugar meter! Not only was the food amazing but the service was so attentive. This meal was the highlight of our trip to Bethlehem and definitely the best we had throughout our travels in Israel and Jordan where we ate very well. An unforgettable experience. Thank you.More

We travelled over two hours to get to Fawda in Bethlehem because Israel makes it so hard to get around to Palestinian cities. But all of that was forgotten once we entered the enchanting space of Horsh Al Serian Hotel, where the restaurant is. Such...a beautiful centuries-old restored section of old Bethlehem just a five minute walk from the Church of the Nativity. Once you settle in the dining room you know that you are in for something special. And special it is indeed. French-trained chef/owner Fadi Kattan surprised us dish after dish of unbelievably original food. There is no fixed menu although they ask you for allergies and if there are any foods that you don’t like when you book. Because of the long travel time, we had booked for lunch rather than dinner. The first dish was a mouth watering grilled baby aubergine with baqleh and olive oil (there were much more ingredients). Then we were presented with an amazing “risotto” with cracked wheat instead of rice in a baby squash shell, and finally a mouth watering lamb that is cooked to perfection. They serve amazing Palestinian wine at Fawda (highly recommended). At the end of the meal, Chef Kattan came out and chatted with us a little, and we learned that he did not know what our menu was going to be until he walked through the local market in the morning and picked out the fresh fruits and vegetables that he deemed worthy of serving in his restaurant that the meal started to take shape in his head. All in all, it was an amazing culinary and cultural experience that my family and I thoroughly enjoyed.More

We were staying at the Hosh Al Syrian guesthouse, so we booked dinner for one evening. When you are booking, they will inquire as to whether or not you have any food allergies, dislikes, dietary preferences etc. That is because the chef shops the markets...and then creates a meal based on his finds. Ironically, we had visited the vegetable and meat market in Bethlehem just hours before, and I was remarking on the size of the fresh peas, which turned up in my second course at the café! Our main course was deliciously fresh, seared lamb with a side dish of freekeh and lentils (love this). The dessert was listed as "eggplant and chocolate" - and that is exactly what it was. The flesh of the eggplant had been turned into a silky, smooth dessert, with a chocolate wafer cookie on top and a dollop of labneh on top. The Fawda Restaurant & Café could definitely hold its own against the finest dining establishments in Europe and United States. The chef is amazing, creative and inventive!More

We are happy to organise every year in collaboration with the Consulate General of France a Semaine de la Gastronomie Francaise, where we invite French chefs, sommeliers, bakers, pastry chefs and fromagers to come to Palestine and work alongside with Palestinian chefs.

I did not expect to experience such a fabulous menu at such a reasonable cost at a guest house in Bethlehem. But I hadn't previously come across Fadi Kattan. Dont forget to book in advance.
