Institute Polaire was on our visit list for Hobart, and I was also interested in buying some of their spirits, Sud Polaire and tasting the Domaine Simha wines. The owner Louise is such a warm and inviting person, and offered to come and open the...More

Dropped in for a wine and was so glad I did. Brilliant wine list, great by the glass but looked superb by the bottle and a cocktail list that looks lots of fun. Extremely friendly staff which made sitting by myself more enjoyable. Highly recommended.

A great little bar with knowledgeable and passionate staff. We had afternoon drinks and oysters, and enjoyed it so much, we returned for dinner.

Description
Tasmania's coolest locale. Settle by the fire in the snowy, luxe interior of marble and plush grey leather at Institut Polaire. This cold climate wine and spirits bar embraces Tasmania’s long held status as the gateway to Antarctica with a passion for everything coldhearted. At Institut Polaire, you will fall in love with graceful wine, aromatic gin and artisan whisky from cool cats across Tasmania and beyond. Sip an Antarctic dry martini, savour new wave Tasmanian pinot noir or nurse your single malt. Dive into some of the world's most revered and challenging terroir with an emphasis on low input, organic, biodynamic farming and natural techniques. Think grower Champagne, ‘riesling to die for’ and pinot noir from emerging local talent alongside cult international icons. Daily small plates and snacks feature organic and local produce and honest favourites from further afield. Look out for the mystery wine challenge and specialty G&T flights.
