We went to Bougainville for the first time this past week and were overwhelmed by the quality of the meal and the equally wonderful service! We could not have been more pleased with everything. Add to this the beautiful atmosphere in the restaurant. We will certainly return to this excellent restaurant. Amsterdam can be very proud !

A restaurant inside Hotel 27, Restaurant Bourgainville was a little hard to find on Google Maps. Once inside it has the ambience of somewhere special that has retained an elegant charm. Waiting service from the bar through to restaurant was top notch. After a local bottled beer in the bar, we were taken to our dining table. The menu draws our eyes to the chef's signature tasting menus, however my companion doesn't enjoy seafood so we chose the venison main instead of 5 or 7 courses of set tasters. Starters were predominantly seafood with crab being frequently on menus at home. We were brought 3 items, with a full introduction. The room was busy so I asked to hear on my hearing aid side, which they noted so no reminder was needed. The three tasters were each incredible on the taste buds, best left as a surprise. Another chef special arrived and it turned out to be a cold fish soup, which was more for seafood lovers who were more intense than us. The wine list was very large, however it had just two Riojas. The sommelier recommended the Macan, which was the most expensive wine I've bought. It was good, but I wouldn't say spectacular. The venison arrived and we both enjoyed it. The meat was cooked quite rare, however it was done with such skill that it was delicious. Although the main alone would leave any diner satisfied, the pudding menu was impossible to ignore. My companion had the Gold option. This appeared with a surprise card to open, as a special touch. The cheese selection came with an array of fruit bread and 3 flavours of chutneys. A wide range of cheese types were represented. As much attention to detail was put into the coffee, which was served with a choice of chocolates chosen from a box. The overall experience was truly a sensational one, not to be missed for those who enjoy haute cuisine.

There is a reason why this place is the #1 in Amsterdam: it's perfect. A great restaurant does not only have amazing food, it should focus on letting people live a beautiful food experience. The core value of Bougainville is in people working there: they are wonderful, caring, never intrusive, sincerely interested in customers satisfaction. Obviously, cuisine is unbelievably good and they have a top-quality wine selection (I would say it suits every budget, taking into account the level of the restaurant).

After booking a reservation at the bougainvil I asked to change the time to an earlier sitting, This was done for us with no problem. Myself and my wife where then late for our sitting, again this was no problem. We had booked for 7 courses but desided that we woukd like to go straight yo the main as we where now running late, we understand the kitchen has to jump ahead of its service to compleat this request and it becomes extra work for the chef but yet again this was also no problem. The staff at the bouganvil can not do enough for you to make you feel comfortable and content in a beautiful surrounding. The food was absolutely exquisite with Tim the resident chef excelling all my expectations and turning out the most beautiful dishes. All in all the bouganvil is a stand alone top class restaurant and it was an absolute pleasure to have the opportunity to enjoy this experience. MR NOWELL.

One of the best restaurants in the Netherlands. Beautiful restaurant with extremely professional and friendly service. The 7 course menu is to die for with no weak dish. The wine list is spectacular, all of the single vinyards selosse’s, a good selection of Arnaud Ente and plenty of Roagna’s all fairly priced. Too bad you can’t eat a la carte as 7 courses over three hours is at bit much and too long for us. Overall an outstanding dinner. We will return many times.

Beautiful place inside and out. The 7 course menu was incredibly tasty and surprising, not to mention the speed of the service and the friendly staff all around. Usually service is way slower in those kind of places but we enjoyed in the best way possible the precious atmosphere and food. Definitely a michelin star restaurant to come back.

The restaurant is a bit like a well choreographed spectacle. Waiters make movements like dancers when serving the dishes, which is fun to watch. Dishes themselves are also presented as a spectacle, whereas the starter with liquid nitrogen boiling over the table is a very nice touch. Dishes are good. One outstanding dish which was the cod with ossenworst. Three types of dressing around it which made it spectacular. Winelist is extensive, although a bit overpriced.

We arrived to celebrate my wife's birthday with 2 more couples, pre-ordered the 7 course meal for everyone and pre-paid for them all (groups of 5+ have to pre-pay for the whole meal). We were welcomed and shown to our seats, the restuarant is built in very good taste and it's super cosy, all the staff is very nice. The food is very interesting and tasty, the combinations in some of the dishes are "strange" but work very well together, even the dish i didn't like (because personally i don't like coconut) was still good. In the end there was a confusion with bill due to a misunderstanding regarding the wagyu supplement, but it was sorted out by the management on the next day and the extra money payed by us was returned in full, they were very kind and helpful with sorting the issue out. All in all a great evening, good food, and great atmosphere, the whole dinner is like a show! Important notice, pay attention that the wagyu supplement costs extra, personally i don't think that the small portion (as tasty as it is) is worth the extra money, but that's my humble opinion.

My wife and I had a marvellous evening at Bougainville. We selected the 7 course taste menu incl. wine menu (5 glasses for my wife and 7 for me). It sounds as a drinking party, but it was not. The concept is that you get wine and after the course you get intro to the wine and the bottle is on the table. This is a really good idea as you then just taste instead of being biased based on wine name and servant intro. We got fantastic starters and appetizers. The “real” menu has a lot of fish. We love fish and it was full of taste. Really wonderful. The servants were kind and gave good introduction to everything. The interior design was soft and warm in orange colors. Anything to improve? Right now I cannot image. This was just a perfect evening.

A truly magical evening from the building itself and the elevator to the dining room (despite a large painting of David Bowie at his most supercilious staring down his nose at you as if you were an uncool interloper). The young waiters work as a fine co-ordinated team, always helpful and knowledgeable but unobtrusively so. We did the tasting menu with accompanying wines. Highlights included brill in a blood orange sauce and an unbelievably good thinly sliced cabbage like a napoleon with a sesame sauce. They pour the wines for you without any comments at all about what you're drinking, but, after you've finished your glass, they leave the bottle so that you can see just how wrong you've been in your guesses (or, if you prefer, you can lie through your teeth and pretend that the only question was whether it was the 1993 or 1994 vintage). An extraordinary French sauvignon blanc that we were both sure was a chardonnay; interesting wines from Slovenia and Spain. And they'd seriously thought about the pairings with the food. Like the Terminator, we'll be back.

I went to Bougainville with an old friend to catch up over a nice dinner and we both ordered the 6 course tasting menu. We had 4 amuse which were creative and good and the courses commenced with corvina and langoustine which were both very good. Next up was the cod/ossenworst which was well cooked but the cod was far too salty and threw off the whole dish. Then the celeriac root arrived and was barely cooked - it was like eating a raw vegetable - absolutely not what you would expect of a 1* restaurant. The venison and dessert were both good and rescued the meal. The interior was nice (a little predictable and old school) and the staff fantastic and choreographed! :-) Overall a plasant enough meal and evening but you don't expect 'pleasant' at a 1 michelin star restaurant and certainly don't expect the hiccups explained above. The restaurant didn't charge for the celeriac in the end.

Bougainville is a must go destination in Amsterdam. The meal was a masterpiece with a spectacular tasting menu and an amazing setting with both old school ambiance sprinkled with cool modern design elements. Aside from the FIVE STAR food, the waitstaff was top notch knowing exactly how to calibrate when to check in and when to leave us be. The timing of how they served courses was impeccable which made the flow of the meal terrific. Beyond the restaurant the accompanying bar was very stylish and hip and next time in Amsterdam we will book a suite at the Hotel Twentyseven for sure

We were very excited for this Michelin starred restaurant visit. The visit started strong, although somewhat pretentious of an atmosphere and staff, with 3 amuse bouches (other tables received 4 so we assume it was due to one of our food allergies unless they just forgot given what happened later). Our order was taken in good order and we had staff attention for the first 30 minutes (other than the Sommelier who was AMAZING throughout). I had the wine pairing thankfully as the choices were excellent and the Sommelier's attention necessary. After our second course, the timing between courses ground to a halt. Then, after our third course, the Sommelier came to explain the wine I had with the last course. I realized he was describing the wine that I had with the course before that. They forgot to serve us one of our courses. He was most apologetic and said they would rectify the situation. He then had to figure out what to pair with the course they forgot as the wine had already switched from white to red in the progression. The last we saw of our server was when she came out to say that we were going to get a special visit from the chef given their mistake and implying that was not typical. The chef visited our table and advised us that we received extra caviar on the dish they missed as an accommodation. However, we then noted that he visited all tables during the evening, which is a lovely touch, but not "special" as the server implied. And after that course, all other courses took 30-45 minutes between them. When we ordered the cheese course, it took 45 minutes for them to serve it even though there were only 3 tables left in the restaurant. And our server and her assistant never came back to our table after the mistake was made. My spouse's cocktail was cleared after the third course and no one ever stopped by to see if he might want another. After 4+ hours, we left the restaurant frustrated at what we spent for the experience and unprofessional service. The only real highlight was the Sommelier - he truly cared about our experience and paired the wine with great expertise. Thankfully the next night we went to a 2 starred Michelin restaurant that actually deserved the honor.

On our fifth and last day in Amsterdam, I wanted to have a romantic dinner and Bougainville gave us that and much, much more. We both chose the vegetarian tasting menu; everything was perfectly prepared and delicious. The staff was outstanding - informative about the dishes, but friendly and not pretentious. The sommelier helped us pick out a moderately priced bottle of wine that went perfectly with our food. We both agreed that our dinner at Bougainville was our best meal in the Netherlands and Belgium!!

Last night we dined exquisitely in the Bougainville. A high class restaurant smack in the middle of Amsterdam right on Dam Square and across from the Palace. Fine and friendly reception. Good table in the cozy restaurant with - thank goodness - subdued and pleasant music. A variety of menus available (5 and 6 course meals) but we went à la carte. After a set of fine amuses we followed up with oysters and steak tartare (perfectly prepared). Main courses were rosé deer and grilled brill, both delicious. Wines: a white and red Saumur. Desserts: good and large selection of cheeses and an ice cream/fruit creation. Service was great: friendly and attentive. Highly recommended.
