The decor, ambiance, food, wine and service are outstanding. When you arrive, you know you're going to have a special evening. We opted for the tasting menu with wine pairing. At 200 per head it actually represents great value for money considering the calibre of...service, food and beverages. Every course was impeccable and the pre starters, breads, particularly the sourdough, were expertly made and delicious. The standout dish for us was the Mille feuille of Sean Ring Chicken - easily a 2 star dish - sumptuous rich flavours and the pastry was so light and airy it cut through the richness - genius! The wine pairings perfectly complimented the food and the sommelier was very friendly and delivered succinct, easy to understand info on each wine. The Lustau sherry with the chocolate soufflé was spot on. They also have one of the biggest Midleton Very Rare Irish whiskey collections in the world! The service and timing was so seamless, we were blown away by the precision and friendliness of the team here, expertly coordinated by the charming Danny Desmond. Chapter 1 is easily one of the best dining experiences in Ireland, better than a recent 2 star Dublin restaurant imo.More
