This is a strip-mall Pho restaurant, not uncommon. I use chicken, Pho Ga, as the "acid test" since this requires a subtle, but aromatic, recipe. The best recipes include coriander, clove, occasionally anise, and cilantro in cooking the chicken. These subtle spices make a big...difference in the often dry, white meat, chicken. Some get it right, others come across as Americanized version, nothing special, nothing offensive. This falls into that category.
