I chose the Arayat set menu. The appetizer course consisted of a prawn and pumpkin ravioli, with a sauce made from prawn heads boiled in coconut milk and sprinkled with bacon bits, cashews, and cured egg yolk. The salad course consisted of shredded ubod (the...heart of coconut palm) and carrots, garnished with lettuce, peanuts, roasted garlic, smoked milkfish, and a tuille I surmise made from ink squid. The main course consisted of humba (pulled pork) mixed with polenta to hold it together which was molded into a cube, and placed on top of a thin slice of pickled jicama in an apple vinaigrette dressing, and topped with some pork cracklings. The dish was garnished with pickled beetroot, arugula, and squash flower tempura (i.e. dipped in batter and deep-fried). After the main course, they served a calamansi, orange and pineapple sorbet in the formed into a popsicle. To end the meal, dessert consisted of a grilled banana wrapped in a crepe (which they referred to as a Dutch pancake), garnished with lemon whipped cream, pink peppercorn caramel (Yes, they spiced up the caramel sauce with pepper), an edible flower and a dusting of confectioners sugar.More
