Without knowing where exactly your end destination is, its hard to say. But generally Aiport MRT is more convenient. Then change to the Metro line at Taipei Station

There is a direct train connection from Taoyuan airport to Taipei MRT central station. One-way chipcards are sold at the airport, but you need to pay cash. Taipei H Imperial is directly opposite the station with an entrance to the underground shopping mall next to the hotel. Be prepared however that Taipei MRT central is huge, covering three blocks and you need some 10-15 walk from Taoyuan line through the underground corridors before you are at the hotel.

It took us about good 5-10 minutes to the MRT and 15 to the Train to the airport. Certainly not so good for an elderly person because they are a lot of steps.
