My husband and I had an absolutely wonderful anniversary weekend at the Canyon Villa with incomparable proprietors Chef William Carter and Katherine Bloxsom-Carter. This was our 5th visit to the villa in 9 years. It just keeps getting better. We ate wonderful food prepared by Chef Wills, drank many great bottles of wine, and made new friends. The rooms are comfy and cozy with unexpected extravagances such as pillow spray, heavy robes, and room heating by an electric fireplace. While there is wifi, don't expect to plant yourself in front of a television or computer. This is the place to go to unplug and get back in touch with each other, the wonderful area, amazing art, great wines, and wonderful food. Chef Wills frequents the local farmers market for the freshest ingredients and prepares as much from scratch as humanly possible. It is a joy to watch him work preparing every detail and seeing the passion he puts into the food he conceives.

We stayed two nights at the Canyon Villa. The property itself is absolutely stunning - immaculately landscaped with an unbeatable view, and is quiet and remote. We stayed in the Cortana room, which had a (very comfy) queen size bed, sitting area, fireplace, private patio, and an enormous bathroom with a great jacuzzi. No TV, but they do offer wifi if you need it.
Despite being remote, it's still plenty easy to get into town. We relied heavily on uber in the evenings. Their neighbors are also a winery and olive oil farm, so you don't even need to venture far for some of Paso's delicious offerings.
The proprietors, Katherine and Wills, are very active and present in your stay, making sure you have everything you need including tips (and coupons) for local wineries, eateries, etc. They clearly enjoy encouraging interaction and a sense of community amongst their guests, offering daily wine hours and opportunities to mingle.
The breakfasts were excellent - seared ruby red grapefruit, almond infused oatmeal, homemade croissants, french pressed coffee, etc. I wish I could start every day with a Chef Wills creation!

My husband and I stayed just one night while we were on our way to Northern California. This property is absolutely gorgeous. They have only four rooms and they are large and spacious with high quality amenities. Our room had a spectacular view of area vineyards. The estate is magnificent and Catherine and William are the most gracious hosts. William is an exquisite chef he spoils the guests with fabulous breakfasts. This place is not to be missed if you are looking for a wonderful experience The Paso wine country. We can't wait to go back!!

This was our 2nd visit, and our 6th anniversary, with Diane and JIm at Canyon Villas. We stayed in the upstairs room facing the side of the property and above the room we stayed in the 1st visit. I can tell you that the 2nd time was even better, because we new what to expect and really looked forward to all the little things. Great breakfast, wine and cheese paired just for us. Great tips on a few new upcoming wineries.
We were able to attend the Paso Robles Mid-state fair and see Trace Adkins this time around. The weather was awesome.
We are thinking of making this a tradition for our anniversary

Out of this world hospitality in an incredible villa situated on incredible setting Wills and Katherine treated us a royalty. Wills is a master chef and his morning creations are fabulous. Afternoon wine and cheese time are full of wonderful wines and cheeses. We enjoyed a private dinner cooked by Chef Wills (who has an extensive and impressive resume).
The Villa sits atop a hill overlooking multiple vineyards equally as impressive as any Tuscan property. Only four suites which allowed privacy if wanted or opportunity to visit and make new friends. Highly recommend this adventure We were here for four nights and each day and night were special on their own

Caio David,
Grazie Mille ... Your experience sums-up our hospitality perfectly. What impressed us the most is your amazing amount of touring to world-class cultural destinations along the Central Coast, relaxing afternoons enjoying the Villa as your home base, winery tastings, the Sunday Supper "trifecta" (conversations with all the guests, the wine and the food) and most of all, your kindness and respect for our property and us. We look forward to welcoming return visit!
Con Affetto,
Kath and Wills
