Can a seven and six year old do this if they are not a strong swimmers?
Being able to climb a jungle gym will be far more important than being able to swim well. While the water does get deep in places, there is no current whatsoever, and the guides provide life jackets for anyone who wants them (and it might be mandatory for little kids - there weren't any kids in our group, but we saw small children in other groups, and all of the kids were wearing life jackets.)
I would recommend a life vest even for a strong swimmer since there is so much excitement in the water.
Check with the tour. Seven seems very young to me for this trek.

Our tour guide from (Mayawalk) provided people in our group with life jackets for some of the non experienced swimmers. There are only a few spots where swimming is necessary. There are portions where it feels claustrophobic and climbing is involved. I feel if they take it easy and are patient there will be no issues! One of the best experiences I've had! Enjoy
