The farm & factory tour at Eiriz was an absolute highlight of our 2 weeks in Andalucia--and a taste sensation to boot. Manuel and Angel were practised and patient guides, showing us the cute black pigs feeding in their oak forest, then the step-by-step production process & quality control for jamon iberico de bellota and lomo, culminating in a tasting of 2 grades of jamon, plus lomo & chorizo, paired with sherry & orange liqueur. They explained in detail the salting/curing/drying process, how to distinguish the escalating grades of jamon, domain certifications etc, but really you can taste the difference - I never knew how fragrant & melt in the mouth 100% jamon de bellota is! An outstanding learning experience and well worth supporting this family-run (for 5 generations!) small business.…

We had a wonderful guided tour of the facilities and the process from feeding the pigs, though the rather complex, labor intensive and time consuming curing process.
