About
Hola y muy bienvenidos! As in all cultures, those born and raised in the society are the best source of knowledge about traditions. As a Mexican native, I inherited my Mexican cuisine knowledge from my previous generations. And my passion too! From my earliest years, I watched my mother, my aunts and grandparents in the kitchen, so I invite you to join me, to use the very fresh ingredients of our Mexican Cuisine, and recreate together those delicious dishes. I love sharing my knowledge about one of the most varied and delicious cuisines in the world. I take pride in customizing my classes to suit the needs of all students -that don't have to stick to a fix classes program calendar. Contact us to arrange your own hands-on class. Classes are from Monday thru Friday, starting at 10:30 am. A minimum number of students apply for each class. We offer special intensive courses of 3 days, 1 week or 2 weeks.

    Learning at the hand of a master chef and teacher!
    My wife and I are both teachers, and agree that Marilau is a superb teacher. She explains very step in the recipes. We learned how to make mole and rice. Mole is complex with many ingredients. She teaches you how to make each one,in what combinations, in what order, and with the correct pans. We constantly tasted the mole after we added each ingredient so we could understand how the flavor changed. The mole we ate was phenomenal. Marilau clearly loves Mexican food and took the time to explain its origins, complexity, and evolution. This is an unforgettable experience!

    Fantastic activity in San Miguel
    This was a highlight of my trip to San Miguel. I took the mole class - which was excellent. Marilau is more than just a superb chef and cooking teaching. She is also a great storyteller and our class was filled with her love of family and Mexican culture.

    Wonderful experience! Do it!
    This was a wonderful experience! Marilau is a wonderful chef, food historian, and teacher. I will go back the next time I am in SMA. Even more positive, I will cook the dishes she taught me at home. Great class!!! Great teacher!!!

This was a wonderful experience! Marilau is a wonderful chef, food historian, and teacher. I will go back the next time I am in SMA. Even more positive, I will cook the dishes she taught me at home. Great class!!! Great teacher!!!

This was a highlight of my trip to San Miguel. I took the mole class - which was excellent. Marilau is more than just a superb chef and cooking teaching. She is also a great storyteller and our class was filled with her love of family and Mexican culture.

What a wonderful experience. Marilau facilitated not only a special Mexican culinary experience but also an in depth cooking class. I've been cooking for decades but Marilau reminded me of the subtle differences timing makes in developing flavour and how attention to detail creates layers of sublime flavours. For those that come to San Miguel de Allende and wonder where the authentic Mexican cooking is.... it's in Marilau's kitchen and the reason you will find few authentic Mexican meals is that this cuisine takes time and what Marilau calls 'respect'. A remarkable cooking experience not to be forgotten, a reminder that food needs time and respect to bring the flavours forward.

Talk about amazing. I bought this cooking class for my mother and I for Christmas. I am so glad that I did my research and chose this class.

We learnt many things and loved Marilau’s approach and organization.

The FOOD! Omg the layers of taste the love she has for it, the care she takes while teaching and cooking is exceptional.

You have to go. 10/10 for sure. Lovely lady, lovely space. My mother is staying here for months and is booking another class with her because yes it’s better than any restaurant you will try and then you can make it back at home.

Book it, don’t hesitate.

This visit to San Miguel I had a chance to do two cooking classes with Marilau. We were able to choose completely different menus for each class. My friends and I loved the classes, and learning about Mexican cooking from Marilau, who comes from a long line of Mexican home cooks. We received detailed instruction on each recipe and came away with some excellent recipes that we can reproduce at home. The food we made was, quite simply, delicious.
Marilau is a lovely host and a good instructor. And, I loved the fact that she offers a choose your own menu option (you can put your three course menu together from a long list of interesting dishes) as long as you give her enough notice to plan and shop for the class.

We had an amazing time. She shares tips that have been passed down through generations and explains how the ingredients relate to the Mexican culture. And OMG the food was amazing. Highly recommend the conchitas pibil. I've never left a TripAdvisor review in my life but this class caused me to do it.

Great experience. Marilou is a great teacher and lets her students do hands on cooking with her. You learn cooking and history both. Delicious and educational! Lots of fun too.

We learned so much in our class with Marilau yesterday. Not only did we receive recipes and instruction for cooking three different dishes, Marilau talked to us about Mexican culinary history, how to use (and not use) chiles, general rules for Mexican cooking and more. She is clear and thorough in her instructions and a pleasure to be with. All three dishes were delicious, and we will definitely prepare them at home. Looking forward to taking another class!
