The tour guides know which vendors have sanitary practices and which to stay away from. You are safe with their choices.

there are 5-6 different venues on the tour at many, but not all, you can "build" a taco that is vegetarian or only with fish

My wife and I used Uber this past January to get to and from the PV cruise terminal and Vallarta Eats. Worked great. Pleasant drivers, OK vehicles, and very cheap.
